Lemon Cranberry Bliss Balls - Nut Free
So I decided to do some experimentation with some ingredients in my pantry, with the aim of making an allergy friendly bliss ball that has lots of nutrition and taste but no nuts;
Here’s what I came up with in the first of many likely goes, since they are just so yummy.
Lemon Goji Balls
12 Medjool dates, pitted, soaked
1 cup of dessicated coconut
1-2 tsp lemon juice, depending on your preference
1 tbsp. of sunflower seed butter or more if you prefer.
3/4 cup cranberries.
I used my Thermomix to chop and combine all the ingredients together, but you could just use a blender. Once blended, roll mixture into small balls and coat in coconut. Store in fridge and see how long you can make them last.
